PEA & HEMP YOGHURT DRESSING
Mint adds a gorgeous freshness to this highly nutritious and versatile dressing. Amazing as a dip, added to wraps or drizzled over salads & roasted veg.

Not suitable for freezing.
Hemp is a proper 'super food'. Relatively few foods are a complete source of protein, but these bad boys do indeed contain all 9 amino acids. Also a great source of Vitamin E & B, magnesium, potassium, iron and zinc.
INGREDIENTS
3 tablespoons dairy free plain yoghurt (I like Alpro no sugars)
3 tablespoons peas
2 teaspoons ground hempseed
1 tablespoon cashew parmysan
Handful fresh mint
1/2 teaspoon paprika
Pinch salt
Black pepper
METHOD
Blitz up all of the ingredients in a hand blender, leaving as much or as little texture as you like.
Note: you can buy ground hemp seeds, but I buy them whole and grind in a coffee grinder.
