TOFU SCRAMBLE

One of my absolute favourite go-to fridge staples!  I make 

a scramble every week and add it to brunch, wraps, fried rice and salads. 

My favourite way of serving at the 

mo is oven baked on sourdough toast and then served with avocado, lime juice and tamari seeds.   

Delicious hot or cold.

Makes 3 main course, or 6 snack size servings. 

Gluten free.

Not suitable for freezing.    

Soya is an excellent source of protein, calcium, selenium, manganese

and copper. 

INGREDIENTS

1 block tofu (I use Cauldron)

1/2 red (or orange or yellow!) pepper, chopped

1/2 red onion, chopped 

Handful green olives (about 12), chopped

5 sundried tomatoes in oil (you can use rehydrated dried for lower fat), chopped small 

Handful chopped fresh herbs, like mint, parsley, chives

2 generours tablespoons frozen petit pois

Black pepper

Anything else you feel like adding - jalapenos, spring onion, dried herbs, dried fruit, edamame beans, shredded red cabbage or kale - get creative!

Sauce

whisk up:

2 tablespoons nutritional yeast (I like Marigold Engevita flakes)

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon paprika

1/4 teaspoon turmeric

1/4 teaspoon salt

Add enough plant milk to make a thick sauce and whisk until smooth (less than you think - add gradually!).  If it goes too watery, just add a little more nutritional yeast/ too thick add more milk. 

METHOD

If you have a tofu press, press tofu for at least half an hour - in my opinion, scramble is far superior when the excess liquid has been removed.  I highly recommend treating yourself to a press (link below to my favourite brand), but don't stress if not - just weight between clean tea-towels under a heavy can or saucepan for at least 30mins. 

Pour boiling water over frozen petit pois and set aside.

Combine peppers, sundried tomatoes, olives, herbs, onion and black pepper in a bowl.  Strain peas and add. 

Put pressed tofu in a bowl and crumble.  Make it as fine or as textured as you like - I like it so there are no big chunks left but not completely pulverised, or it can get a little mushy once the sauce is added.  You can use a fork but it's so much faster and more efficient with your hands! 

Add to the bowl with the other ingredients and stir through. 

Pour in your sauce and combine thoroughly.

Try not to eat it all immediately from the bowl - this is extremely mooreish stuff!!
